Ingredients for making Jaggery Kheer-
Rice soaked and filtered – 1/2 (half) cup
-Grated jaggery – 3/4 cup
Milk – 4 cups
Ghee – 2 tbsp
Cashew – 10-12
Raisins – 2 tbsp
Green cardamom powder – 1/2 (half) tsp
How to make Jaggery Kheer –
To begin making Jaggery Wali Kheer, first heat milk in a non-stick pan, add rice and cook, mixing well. After this, heat ghee in another pan and fry cashews and raisins in it. When cashews and raisins turn light brown, take them out in a bowl. Now add cardamom powder to the kheer, turn off the flame and let the kheer cool down. Put the second pan back on the flame, add the ground jaggery and half a cup of water and stir continuously till the jaggery dissolves.
After this, turn off the flame and let the syrup cool down a bit. When the rice is completely cooked, switch off the flame and stir the mixture till it cools down a bit. Now keep some roasted dry fruits for garnishing at this time and add the rest to the rice mixture. After this, add jaggery water to the rice mixture and mix it well. Take out the kheer in a serving bowl, garnish with dry fruits and serve.
